Steph in Thyme is about making wholesome awesome, with every bite.
This blog is a place where I share vegetarian and vegan recipes that are all gluten-free.
My ultimate mission is to offer inspiration and creative approaches to delicious meat-free and gluten-free meals that both vegetable lovers and meat eaters will enjoy.
Why gluten-free? Why vegetarian and vegan? Simply put, for improved health and wellness.
I have been living and eating gluten-free for over five years. Shortly after completing grad school, I discovered that a myriad of seemingly unconnected health issues cleared up the moment I removed gluten from my diet. Years of not knowing “what was wrong” was answered simply by bidding farewell to gluten – pretty crazy.
My journey to finding the right foods for my body didn’t stop with gluten. I started this blog in 2014 when my husband (known as “CJ” here) and I began shifting to a vegetarian diet, finding that we physically felt better not consuming meat.
Early in our transition, we found ourselves falling into a pattern of making the same gluten-free vegetarian foods over and over again. I began writing down creative recipe ideas to keep our approaches healthy, exciting and interesting. It was also a fun challenge. How many ways can I prepare spiralized vegetables? How can I reinvent foods such as sushi, tacos, and chili without meat and gluten that are still oh so good?
Knowing I was likely not alone in the desire for delicious and “let’s keep things interesting” foods, I decided to share my creations on a blog. Soon thereafter, Steph in Thyme was born.
As time passed, CJ and I began exploring more plant-based foods and a vegan lifestyle, embracing tofu in place of eggs and coconut and nut based sources in place of dairy. I discovered a whole new level of creativity in the kitchen, my motivation and desire to make wholesome awesome growing stronger.
Steph in Thyme has since grown into a place for not only gluten-free and vegetarian awesomeness, but vegan as well.
It is my belief that part of a healthy lifestyle is moderation. We all deserve a little treat once and awhile, which is why cakes and other little indulgences make an occasional appearance. They are more the exception than the norm, serving as a reminder to treat yourself in equally awesome ways.
